My mind is busy thinking…
What to make for lunch?
A turkey sandwich for the main course,
a side of carrots for some crunch!
But wait, this is boring, I make this everyday…
I need to mix things up a bit
so my kids will come home and say…
“Mom, that was the best lunch! You’re so awesome and so cool!
It tasted so good, and filled me up, I just LOVE being in school!”
OK, a mom can dream! But at least I know I tried!
So, here are 6 recipes that will make them smile and leave them satisfied!
Combine tomato and a squeeze of lime juice, chopped white onion, and cilantro. Add black beans and yellow corn.
Combine 1 avocado mashed with a little lemon juice and plain Greek yogurt on the side. Use chips to scoop & eat!
Combine 1 avocado mashed with lemon juice and top with a layer of shredded Monterey Jack Cheese. Fill whole wheat tortillas with chicken and romaine lettuce. Assemble at lunch.
Combine 4 chopped hard-boiled eggs (2 with only the egg whites), mayonnaise, mustard, and green onion. Season with salt, pepper and paprika. Trim the crust off the bread and roll to get as thin as possible. Spread with a layer of egg salad and roll.
Combine shredded rotisserie chicken, apple, celery, raisins, and mayonnaise. Scoop on top of lettuce leaf and place inside hamburger bun.
Cut pita in half. Spread hummus inside each pita. Distribute between the two: crumbled turkey bacon, tomato, and romaine lettuce.
Combine 1 can tuna, celery, onion, mayonnaise, a squeeze of lemon juice. Season with parsley, garlic powder, salt and pepper. Mix well and refrigerate until chilled.
Trim crust off of the bread and roll to get as thin as possible. Spread tuna salad on each slice of bread. Sprinkle grated carrots on the end of each piece. Roll up bread tightly, and slice into “sushi” pieces.
Be sure to include healthy sides with every lunch like fruit and raw veggies with hummus or honey mustard for dipping.
